Our restaurant, d’Annam, pays homage to the historical region of Annam—an ancient name for central Vietnam that dates back to the 7th century and gained prominence during the era of French Indochina. This name embodies our commitment to authentic Vietnamese dining and reflects the rich cultural heritage along with the enduring French influence that has subtly shaped Vietnamese cuisine.
D’Annam showcases this unique cultural fusion—where bold Vietnamese flavors harmonize with refined French culinary techniques. It was during this colonial era that Phở, Vietnam’s most iconic noodle soup, is believed to have emerged, inspired by the French dish pot-au-feu, yet transformed with native rice noodles, aromatic herbs, and regional spices.
Phonetically, the name can be interpreted as “Dân Nam” in Vietnamese—meaning “People of the South.” This dual meaning not only honors the historical roots of the Annam region but also pays tribute to the spirit, identity, and resilience of the Vietnamese people.
